  2. In a sizeable pot set over a medium-high flame, heat the vegetable shortening until melted. Toss in the chopped onions, sautéing them to a golden hue for approximately 5 minutes. Enhance the mixture with aromatic spices including cinnamon sticks, cloves, ground ginger, cumin, garlic powder, and cardamom seeds, stirring the concoction for another 3 to 4 minutes to awaken the spices’ full bouquet.
  3. Introduce the rice to the pot, continuously stirring, and let it toast lightly for about 10 minutes. Fold in the creamy yogurt, the previously prepared saffron-infused water, and a dash of salt to taste. Allow the mixture to reach a gentle simmer, then dial down the heat to its lowest setting. Cover the pot with a quadruple-folded kitchen cloth, then secure it with a lid on top, and let the rice steam to perfection for around 20 minutes. Prior to serving, remember to fish out and discard the whole cinnamon sticks, cloves, and cardamom seeds.
