  1. Fill a large pot with water and bring it to a rolling boil. Smash 3 cloves of garlic and 2 pieces of ginger, then insert them into the cavity of the chicken. Knot the green onions and place them inside the chicken along with 1/2 teaspoon of salt. Gently lower the chicken, breast-side down, into the boiling water.
  2. Once boiling, cover the pot and remove it from the heat. Let the chicken sit, covered, for 40 minutes, flipping it halfway through the cooking time.
  3. While the chicken is poaching, heat vegetable oil and 1 tablespoon of sesame oil in a large pan over medium heat. Sauté shallots, ginger, and garlic in the oil until they release their aroma. Add cilantro and rice, stirring until the rice is lightly toasted. Pour in the chicken stock and season with salt. Bring to a boil, then cover and reduce the heat to low. Let it simmer until the rice is tender and steam holes form on the surface, approximately 20 minutes.
  4. Once the chicken is cooked, remove it from the pot and run it under cold water to tighten the skin. Rub the skin with sesame oil, then chop the chicken into pieces. Arrange the chicken pieces on a serving dish and garnish with cilantro, green onion, cucumber, and tomato. Serve alongside the fragrant rice.
