Experience the rich, savory flavors of New Orleans with this authentic red beans and rice recipe. Perfect for a comforting family meal, this dish combines tender red beans, smoky sausage, and aromatic vegetables to create a taste sensation that will transport you straight to the heart of Louisiana.

  1. Heat the shortening in a skillet over medium heat. Add the onion, bell pepper, and garlic to the hot skillet and sauté, stirring frequently, until the vegetables are soft, about 5 to 7 minutes.
  2. In a large pot, combine the water, red beans, and ham hock, and bring the mixture to a boil. Add the sautéed onion mixture to the pot along with the smoked sausage and celery. Bring the pot back to a boil. Stir in the bay leaves, Creole seasoning, thyme, and sage. Lower the heat to a simmer, cover the pot, and cook until the beans are tender, approximately 5 hours.
  3. Once the beans are tender, remove and discard the ham hock and bay leaves. Stir in the hot pepper sauce and serve the mixture over cooked white rice.

  • -For added flavor, consider using chicken broth instead of water.
    – Adjust the cayenne pepper to your preferred level of spiciness.
    – This dish can be made vegetarian by omitting the sausage and using vegetable broth.

What other meats can I use?

You can substitute the smoked sausage with ham hocks, andouille sausage, or even bacon for different flavor profiles.
