  1. Heat the shortening in a skillet over medium heat. Add the onion, bell pepper, and garlic to the hot skillet and sauté, stirring frequently, until the vegetables are soft, about 5 to 7 minutes.
  2. In a large pot, combine the water, red beans, and ham hock, and bring the mixture to a boil. Add the sautéed onion mixture to the pot along with the smoked sausage and celery. Bring the pot back to a boil. Stir in the bay leaves, Creole seasoning, thyme, and sage. Lower the heat to a simmer, cover the pot, and cook until the beans are tender, approximately 5 hours.
  3. Once the beans are tender, remove and discard the ham hock and bay leaves. Stir in the hot pepper sauce and serve the mixture over cooked white rice.
