Dive into the heart of Louisiana with this authentic red beans and rice recipe. Slow-cooked to perfection, this dish brings together the rich flavors of smoked sausage, tender red beans, and aromatic spices. Perfect for a cozy family dinner or a hearty gathering with friends.

  1. Prepare all the ingredients
  2. In a large skillet over medium-high heat, cook the sausage until browned, about 5 to 7 minutes. Using a slotted spoon, transfer the sausage to a slow cooker, leaving the drippings in the skillet.
  3. Add the chopped onion, bell pepper, jalapeño, and garlic to the skillet with the drippings. Cook and stir over medium heat until the vegetables are soft, approximately 5 minutes. Transfer this mixture to the slow cooker.
  4. Add the soaked beans and ham hock to the slow cooker. Pour in the water, then add the basil, Creole seasoning, and pepper. Cover and cook on Low for about 8 hours, or until the beans are tender.
  5. If the bean mixture is too liquidy, remove the lid, increase the heat to High, and cook until the beans reach a creamy consistency. Serve with cooked rice.

  • – For a vegetarian version, omit the andouille sausage and use vegetable broth instead of water.
    – Adjust the level of cayenne pepper to your preferred spice level.
    – This dish can be made ahead and tastes even better the next day.
