These air-fried spring rolls are a healthier twist on the traditional deep-fried version. Packed with fresh vegetables and wrapped in a crispy shell, they make a delightful appetizer or snack that’s sure to impress.



  1. Soak the noodles in a bowl of hot water for approximately 5 minutes until they become soft. Then, cut the noodles into shorter lengths.
  2. In a wok, heat sesame oil over medium-high heat. Add the ground beef, mixed vegetables, onion, and garlic. Cook for about 6 minutes, or until the beef is nearly browned. Remove the wok from heat and stir in the noodles, allowing the mixture to stand until the juices are absorbed. Add soy sauce to the mixture.
  3. Preheat the air fryer to 350°F (175°C).
  4. Place an egg roll wrapper on a flat surface and add a diagonal strip of the filling. Fold the top corner over the filling, then fold in the side corners. Brush the center with cold water and roll the spring roll to seal it. Repeat this process with the remaining wrappers and filling.
  5. Brush the tops of the spring rolls with vegetable oil. Place a batch of spring rolls in the air fryer basket and cook for about 8 minutes, or until they are crisp and lightly browned. Repeat until all the spring rolls are cooked.
