Description

  1. In a small bowl, combine vinegar, fish sauce, sugar, lime juice, minced garlic, and red pepper flakes. Whisk until well blended and set the sauce aside.
  2. In a small skillet, heat oil over medium heat. Add the shallots and cook, stirring frequently, until they are softened and lightly caramelized, which should take about 8 minutes.
  3. Preheat an outdoor grill to medium heat and lightly oil the grate. Thread 4 shrimp onto each skewer and grill them until they turn pink and have a slight char on the outside, approximately 1 to 2 minutes per side. Set the grilled shrimp aside.
  4. In a large pot, bring water to a boil. Add the vermicelli noodles and cook until they are soft, about 12 minutes. Drain the noodles and rinse them with cold water, stirring to ensure they are well separated.
  5. To assemble the vermicelli bowls, place the cooked noodles in one half of each serving bowl. Arrange the lettuce and bean sprouts in the other half. Top each bowl with cucumbers, shredded carrots, daikon, chopped peanuts, cilantro, Thai basil, mint, and the caramelized shallots. Serve the bowls with the grilled shrimp skewers and the prepared sauce on the side. Pour the sauce over the ingredients and toss thoroughly to coat before eating.
