  • Sauces:

  2. Fill a large bowl with warm water. Submerge one rice paper wrapper in the water for about 1 second to soften it. Lay the softened wrapper flat on a surface. Arrange 2 shrimp halves in a row across the center of the wrapper. Add a portion of the vermicelli noodles, lettuce, mint, cilantro, and basil, ensuring to leave about 2 inches of space on each side. Fold the sides inward and then roll the wrapper tightly, starting from the end with the lettuce. Repeat this process with the remaining ingredients.
  3. For the dipping sauces: In a small bowl, combine water, lime juice, sugar, fish sauce, minced garlic, and chili sauce, mixing until thoroughly blended. In another small bowl, mix together hoisin sauce and chopped peanuts.
  4. Serve the rolled spring rolls with the prepared fish sauce and hoisin sauce mixtures.

    – These spring rolls are best served fresh but can be stored in the refrigerator for up to 24 hours. Cover them with a damp cloth to keep the rice paper from drying out.
