Description

Enjoy a burst of fresh flavors with these Vietnamese spring rolls, packed with shrimp, herbs, and crisp vegetables, all wrapped in delicate rice paper.

Ingredients

  • Sauces:

Instructions

  1. Bring a large pot of lightly salted water to a rolling boil. Add the vermicelli noodles and stir. Cook the noodles, uncovered and stirring occasionally, until they are tender but still firm, about 3 to 5 minutes.
  2. Fill a large bowl with warm water. Submerge one rice paper wrapper in the water for about 1 second to soften it. Lay the softened wrapper flat on a surface. Arrange 2 shrimp halves in a row across the center of the wrapper. Add a portion of the vermicelli noodles, lettuce, mint, cilantro, and basil, ensuring to leave about 2 inches of space on each side. Fold the sides inward and then roll the wrapper tightly, starting from the end with the lettuce. Repeat this process with the remaining ingredients.
  3. For the dipping sauces: In a small bowl, combine water, lime juice, sugar, fish sauce, minced garlic, and chili sauce, mixing until thoroughly blended. In another small bowl, mix together hoisin sauce and chopped peanuts.
  4. Serve the rolled spring rolls with the prepared fish sauce and hoisin sauce mixtures.

Notes

  • – For added flavor, marinate the shrimp in a bit of lime juice and fish sauce before assembling the rolls.
    – These spring rolls are best served fresh but can be stored in the refrigerator for up to 24 hours. Cover them with a damp cloth to keep the rice paper from drying out.
