Ideal for family gatherings or special occasions, this recipe brings a touch of elegance and tradition to your table.

  1. Fill a pot with water and add kosher salt. Bring to a rolling boil.
  2. Add the rice and cook, stirring occasionally, for precisely 7 minutes. Drain the rice thoroughly.
  3. Prepare Potato Layer:

  4. In a separate pot, heat olive oil over medium-high heat.
  5. Arrange a single layer of potato slices on the bottom of the pot.
  6. Sprinkle the potatoes with cumin and a pinch of salt.
  7. Cook until the potatoes start to sizzle, which should take about 2 to 3 minutes.
  8. Evenly spread the cooked rice over the potatoes to form a uniform layer.
  9. Reduce the heat to low and place slices of butter on top of the rice.
  10. Steam the Rice:

  11. Cover the pot with a layer of clean paper towels, then secure the lid over the towels.
  12. Allow the rice to steam until it becomes fluffy, approximately 45 minutes.
  13. Prepare Saffron Rice:

  14. Using a mortar and pestle, grind the saffron threads.
  15. Mix the ground saffron with 1 1/2 tablespoons of hot water in a large bowl.
  16. Add a few spoonfuls of the steamed rice to the saffron mixture and stir until the rice turns yellow.
  17. Serve:

  18. Transfer the remaining steamed rice to a serving bowl.
  19. Top the rice with the saffron-infused rice.
  20. Arrange the potato slices around the edges of the bowl.
  21. Garnish with fresh parsley.

  • – For an extra-rich flavor, you can use ghee instead of vegetable oil.
    – Be cautious when inverting the pot to ensure the crispy tahdig remains intact.
