This Hearty Mexican Beef and Rice Bake is a delicious and satisfying dish that combines seasoned ground beef, rice, and a blend of cheeses, all baked to perfection. It’s a perfect meal for busy weeknights or weekend gatherings.

  1. Preheat your oven to 375°F (190°C) and lightly coat a 9×13-inch casserole dish with cooking spray.
  2. In a large skillet over medium-high heat, brown the ground beef. Once it starts to brown, add the onion, garlic, and taco seasoning. Continue cooking until the beef is fully browned and no longer pink, approximately 5 to 7 minutes. Drain any excess fat and discard. Then, mix in the beans, tomatoes, spinach, chicken broth, 1 cup of the Mexican blend cheese, rice, and salsa. Transfer this mixture to the prepared casserole dish.
  3. Place the dish in the preheated oven and bake until the rice is fully cooked, about 45 to 50 minutes. Remove from the oven, sprinkle the remaining cheese on top, and return to the oven to bake until the cheese is melted, roughly 10 minutes more.

  • – Feel free to use brown rice instead of white rice for added nutrition, but adjust the cooking time accordingly.
    – You can substitute ground turkey or chicken for the ground beef for a lighter option.
    – This casserole can be made ahead of time and refrigerated. Simply reheat in the oven before serving.
