Instructions

    To prepare the stock:

  1. Place the turkey carcass, onion, carrot, celery, garlic, rosemary, thyme, bay leaves, salt, and pepper into a large stockpot.
  2. Add enough water to fully submerge the ingredients.
  3. Bring the mixture to a boil, then cover the pot, lower the heat, and let it simmer for approximately 1 hour to allow the flavors to meld.
  4. Once done, remove the turkey carcass and strip off any remaining meat, setting it aside and discarding the bones.
  5. Use a slotted spoon to take out and dispose of the vegetables and bay leaves.
  6. To prepare the soup:

  8. Bring the mixture to a boil, then reduce the heat, cover the pot, and let it simmer for 20 to 30 minutes until the vegetables are very tender.
  9. Incorporate the cooked rice and the reserved turkey meat into the soup.
  10. Season with salt and pepper to taste.
  11. Cook for an additional 5 minutes until the rice and turkey are heated through.
