  1. In a large pot, combine 6 cups of chicken broth, water, chicken tenders, chicken bouillon cubes, olive oil, granulated garlic, cumin, salt, and pepper. Bring the mixture to a boil. Once boiling, reduce the heat, cover the pot, and let it simmer until the chicken is fully cooked, approximately 25 minutes. Using two forks, gently shred the chicken. Add the chopped onion to the broth and continue to simmer for an additional 5 minutes.
  2. In a separate saucepan, bring 2 cups of chicken broth, rice, and chili powder to a boil. Lower the heat to medium-low, cover, and let it simmer until the rice is tender and the liquid is absorbed, around 25 minutes.
  3. To serve, place a portion of rice into each bowl and ladle the soup over the rice. Garnish with slices of avocado and chopped cilantro.
