Hearts of Palm Risotto Ingredients
  • 2 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1/2 cup onion (finely chopped)
  • cups Arborio rice
  • ¼ cups dry white wine
  • 3 cups vegetable broth (boiling)
  • ½ cans hearts of palm (14 ounce, drained and chopped)
  • ¼ cups Parmesan cheese (freshly grated)
  • 1 tablespoon fresh parsley (chopped)
  • salt and pepper (To taste)
Instructions
  1. Melt 1 tablespoon butter with olive oil in a medium saucepan over medium heat. Add onion; cook and stir until softened, about 5 minutes.

  2. Stir in Arborio rice; cook and stir until rice is glossy, about 3 minutes. Pour in white wine and simmer until absorbed.

  3. Add 1/2 cup vegetable broth, stirring constantly until broth is absorbed. Continue adding broth 1/2 cup at a time, stirring constantly, until rice is tender and mixture is creamy, about 20 minutes.

  4. Stir in chopped hearts of palm, remaining 1 tablespoon butter, Parmesan cheese, and parsley. Season with salt and pepper. Let stand for 5 minutes before serving.
