This easy and flavorful chicken and broccoli stir-fry is a perfect weeknight dinner that comes together in just 35 minutes. Tender chicken thighs and crisp broccoli florets are coated in a savory sauce with hints of ginger, garlic, and a touch of heat from crushed red pepper flakes. Serve this dish over steaming rice for a satisfying and nutritious meal.

  • 2 teaspoons canola oil
  • 1 pound boneless skinless chicken thighs (cut into 3/4-inch pieces)
  • 3 tablespoons cornstarch (divided)
  • ¾ cups onion (thinly sliced)
  • 2 teaspoons fresh ginger (minced)
  • 4 cloves garlic (thinly sliced)
  • 5 cups broccoli florets
  • 3/4 cups water
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon light brown sugar
  • ¼ teaspoons crushed red pepper flakes (or to taste)
  • 1/4 teaspoon freshly ground black pepper
  1. Before starting, ensure you have all the necessary ingredients ready.

  2. In a large non-stick skillet, heat the canola oil over medium-high heat until it appears shimmery, which should take about 2 minutes. While the oil heats up, in a medium bowl, combine the chicken pieces with 1 tablespoon of cornstarch, making sure the chicken is evenly coated.

  3. Once the oil is hot, add the cornstarch-coated chicken to the skillet in a single layer. Cook the chicken, stirring frequently, until it becomes crisp and fully cooked, which should take approximately 6 minutes. Next, add the sliced onions to the skillet and continue cooking, stirring often, until the onions turn translucent, about 1 minute. Then, add the minced ginger and sliced garlic cloves to the skillet, and cook for another minute, stirring constantly, until the mixture becomes fragrant. Once done, transfer the chicken mixture to a plate and set it aside.

  4. In the same skillet, add the broccoli florets and cook over medium-high heat, stirring occasionally, until the broccoli turns bright green and is heated through, which should take about 2 to 3 minutes.

  5. While the broccoli cooks, in a small bowl, whisk together the water, soy sauce, oyster sauce, light brown sugar, crushed red pepper flakes, black pepper, and the remaining 2 tablespoons of cornstarch. Whisk the mixture until it becomes smooth, which should take approximately 30 seconds.

  6. Add the cooked chicken mixture back to the skillet with the broccoli. Pour the prepared sauce mixture over the chicken and broccoli, and cook, stirring constantly, until the broccoli and chicken are well coated, and the sauce thickens, which should take about 2 minutes.

  7. Once the stir-fry is ready, serve it immediately. Enjoy your delicious and healthy meal!
