Description

This is a flavor-packed side dish that will transport you to the vibrant streets of Mexico. With aromatic spices, tangy tomatoes, and fluffy long-grain rice, it's a fiesta of flavors ready in a flash!

Fiesta Ingredients
  • 1 tablespoon vegetable oil
  • 1 cup long grain white rice
  • 1 cup chicken broth
  • 1 can tomato sauce ((8 ounce))
  • 1/4 cup water
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
Instructions
  1. Turn on the Instant Pot and select the Sauté function. Add vegetable oil and rice; cook for 1 minute, stirring frequently.

  2. Add chicken broth, tomato sauce, water, chili powder, cumin, garlic powder, and salt. Stir well to combine.

  3. Close the lid and set the valve to Sealing position. Cook on High Pressure for 22 minutes.

  4. Once done, allow for a 10-minute Natural Pressure Release. Then, release any remaining pressure.

  5. Fluff the rice with a fork and serve hot, garnished with fresh cilantro or lime wedges if desired.
