This delicious beef and asparagus noodle dish combines tender slices of beef with fresh asparagus and savory noodles, all brought together with a flavorful sauce. It’s a quick and easy meal that’s perfect for busy weeknights or a cozy dinner.

  1. Place the noodles in a large bowl and pour hot water over them. Let them sit until they become soft, which should take about 15 minutes.
  2. While the noodles are soaking, mix together the vinegar, lime zest and juice, brown sugar, and chili powder in a small bowl. Set this sauce mixture aside.
  3. Heat oil in a skillet over medium-high heat. Add the beef, five-spice powder, and a pinch of salt. Cook and stir until the beef is browned and crumbly, which should take around 5 minutes.
  4. Add the asparagus, garlic, and ginger to the skillet. Cook and stir until the asparagus turns bright green, approximately 1 to 2 minutes.
  5. Drain the softened noodles and add them to the skillet along with the beef mixture and prepared sauce. Toss everything together until well combined. To serve, sprinkle with peanuts and cilantro.
