Instructions

  1. In a saucepan, bring water and rice to a boil over medium-high heat. Once boiling, lower the heat, cover, and let it simmer until the rice is tender, which should take around 20 minutes. Remove from heat and keep warm.
  2. While the rice is cooking, combine flour, salt, pepper, paprika, and thyme in a medium bowl. Coat the chicken breasts in this flour mixture, ensuring they are thoroughly covered. Set aside 2 tablespoons of the flour mixture for the gravy.
  3. Melt butter in a large skillet over medium heat. Place the coated chicken in the skillet and cook until it is golden brown and the juices run clear, approximately 10 minutes per side. Ensure the internal temperature of the chicken reaches at least 165°F (74°C). Use tongs to transfer the chicken to a plate, leaving the drippings in the skillet.
  4. In a bowl, whisk together 3/4 cup water, the reserved 2 tablespoons of the flour mixture, and a bit of salt. Pour this mixture into the skillet and whisk continuously, scraping up any browned bits from the bottom of the pan. Cook over medium heat, whisking constantly until the gravy is thick and bubbly. If the gravy is too thick, add more water, one tablespoon at a time, until the desired consistency is reached.
  5. Serve the chicken alongside the warm rice, and generously ladle the gravy over the top.
