  7. Once the rice has absorbed all the chicken stock, fold in the peas and ham for added flavor and texture. Season the mixture with salt and pepper to taste.

  12. Gently roll each ball in flour, dip it into the egg and milk mixture, and then coat it evenly with bread crumbs.
  13. Heat 1 cup of vegetable oil in a deep-fryer or a large deep saucepan to 350 degrees F (175 degrees C). Fry the balls in batches until they are beautifully golden all over.
  14. Let the fried arancini rest on a plate lined with paper towels to absorb excess oil. Keep them warm by placing them in the preheated oven until ready to serve.
