  1. Begin by preparing the rice. In a saucepan, combine the rice with an appropriate amount of water (as per the rice package instructions). Over high heat, bring the mixture to a rolling boil. Once boiling, reduce the heat to a medium-low setting, cover the saucepan with a lid, and let the rice simmer. Allow the rice to cook until it becomes tender and has absorbed all the water, which should take between 20 to 25 minutes.
  2. While the rice is cooking, prepare the bacon. Place the bacon strips in a large skillet and set the stove to medium-high heat. Cook the bacon, turning the slices occasionally to ensure even browning and crispiness on both sides, which will take around 10 minutes. Once the bacon is cooked to your liking, remove it from the skillet and place it on a plate lined with paper towels to drain off the excess grease. Once cooled, crumble the bacon into small, bite-sized pieces. Keep the bacon fat in the skillet for the next steps.
  3. Using the same skillet with the reserved bacon fat, proceed to cook the eggs. Crack the eggs into the skillet and cook them over medium heat, stirring occasionally. You’ll want the eggs to be slightly set but not fully cooked, which should take about 1 to 3 minutes.
  4. To the skillet with the partially cooked eggs, add the diced yellow onion, peas, chopped green onion, and 1 1/2 teaspoons of soy sauce. Continue to cook and stir this mixture until the yellow onion becomes soft and translucent. This should take approximately 5 minutes.
  5. After the onions have softened, reduce the heat to low. Now, add the cooked rice into the skillet with the egg and vegetable mixture. Also, include the crumbled bacon and the remaining amount of soy sauce. Stir everything together until the ingredients are well combined and the rice mixture is thoroughly heated through. The final heating should take about 1 to 3 minutes.
  6. Once everything is hot and mixed, your dish is ready to be served. Enjoy your homemade fried rice while it’s warm.

Notes

  • – Using leftover rice from the previous day can yield the best texture for fried rice as it’s drier and less sticky.
