This Texas-Style Rice Casserole is a comforting and satisfying one-dish meal that combines savory ground beef, bell peppers, and onions with fluffy rice and a blend of spices. It’s a simple, yet delicious recipe that’s perfect for a family dinner or potluck.



  1. Preheat oven to 375°F.
  2. In a large skillet, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.
  3. Add the onion and bell pepper to the skillet. Cook for 5 minutes, stirring occasionally, until vegetables are softened.
  4. Stir in the uncooked rice, diced tomatoes, beef broth, chili powder, garlic powder, cumin, salt, and black pepper. Bring the mixture to a simmer.
  5. Transfer the mixture to a 9×13 inch baking dish. Cover tightly with foil and bake for 30 minutes.
  6. Remove the foil, sprinkle the top with shredded cheddar cheese, and bake for an additional 15 minutes, or until the rice is tender and the cheese is melted and bubbly.
  7. Let the casserole rest for 5 minutes before serving.


  • This casserole can be made ahead of time and reheated before serving. It also freezes well for up to 3 months.
