  1. Heat your grill to a medium-high setting and prepare the grates with a light brushing of oil.
  2. In a pot, combine water and rice and bring to a rolling boil. Then, turn down the heat to a gentle simmer, cover the pot, and let the rice cook until it’s fluffy and all the water has been soaked up, which should take about 20 to 25 minutes.
  3. In a blender, combine ripe mango pieces, a drizzle of olive oil, a squeeze of lime juice, a dollop of honey, a splash of Sriracha sauce, minced garlic, and a pinch of salt. Blend these ingredients until you get a smooth, homogenous sauce. Take your chicken and lay it in a flat dish, then spoon half of the mango mixture over it, ensuring it’s well-coated for marination. Let it sit for about 10 minutes.
  4. For the corn salsa, take a mixing bowl and toss together black beans, sweet corn kernels, diced red bell pepper, chopped red onion, freshly chopped cilantro, another squeeze of lime juice, and a sprinkle of salt.
  5. Place the chicken on the grill and cook it until it’s thoroughly done, which should be around 4 minutes on each side. You’ll know it’s ready when the chicken is no longer pink inside and the juices are clear. For safety, the internal temperature should reach at least 165 degrees F (74 degrees C) when checked with a thermometer. Once cooked, take the chicken off the grill.
  6. To assemble the meal prep bowls, spoon an even amount of cooked rice into four glass containers. Nestle two pieces of your grilled chicken into each bowl, then lavish with the remaining mango sauce and a generous scoop of the corn salsa. Finish by adding a scattering of coconut flakes and a few slices of avocado on top. Seal the bowls and they can be stored in the refrigerator for up to 5 days.
