Experience the essence of Thai dessert with this luscious combination of sweet mango and creamy coconut-infused sticky rice. This dish is a traditional Thai favorite, known for its delightful balance of flavors that transport you to the tropical havens with every bite. Perfect as a refreshing summer dessert or a special treat, it’s sure to impress with its simplicity and exotic taste.

  1. Assemble your ingredients.
  2. In a cooking pot, mix together rice and water. Heat until boiling, then cover and turn down the heat to simmer. Cook until all the water has been absorbed, which should take about 15 to 20 minutes.
  3. While the rice is simmering, pour 1 ½ cups of coconut milk into a separate pot, add 1 cup of sugar, and 1/2 teaspoon of salt. Heat this mixture over a medium flame until it reaches a boil, then take it off the heat and put it aside.
  4. Once the rice is done, blend it with the sweetened coconut milk you prepared earlier. Put a lid on it and leave it to settle at room temperature for about 1 hour.
  5. For the sauce, whisk together 1/2 cup of coconut milk, 1 tablespoon of sugar, 1/4 teaspoon of salt, and tapioca starch in a saucepan. Heat this mixture until it reaches a boil, stirring it until it becomes slightly thicker.
  6. To serve, spoon the coconut rice onto a dish and neatly place mango slices on top. Drizzle the prepared sauce over both the mangos and rice.
  7. Finish by scattering sesame seeds over the dish.

  • – Soaking the rice overnight will yield the best texture.
    – Use ripe mangos for the sweetest flavor.
    – If tapioca starch is unavailable, cornstarch can be used as a substitute.

Can I use long-grain rice instead of short-grain?

Short-grain rice is preferred for its sticky texture, but in a pinch, long-grain can be used with a slightly different texture.

How do I store leftovers?

Keep the sticky rice and mangoes separate. Store the rice in an airtight container in the refrigerator for up to 3 days. Mangoes should be kept at room temperature if they are not yet ripe, or in the refrigerator if already ripe.

Can I make this dessert vegan?

Yes, ensure the sugar and coconut milk you are using are vegan-friendly, as some sugar is processed with bone char and some coconut milk may contain additives not suitable for vegans.
