Dive into a vibrant and healthy meal with this Zesty Chicken Stir-Fry Extravaganza. Bursting with fresh vegetables and tender chicken, this dish is perfect for a speedy yet satisfying dinner. Infused with a savory sauce, it’s a delightful way to enjoy a balanced meal any night of the week.

  1. In a saucepan, bring water and rice to a boil over high heat. Once boiling, reduce the heat to medium-low, cover the pan, and let it simmer until the rice is tender and the liquid is fully absorbed, approximately 20 to 25 minutes.
  2. While the rice is cooking, mix soy sauce, brown sugar, and cornstarch in a medium-sized glass or ceramic bowl until smooth. Add ginger, garlic, and red pepper flakes to the mixture, then add the chicken pieces, stirring to coat them well. Cover the bowl and let it marinate in the refrigerator for at least 15 minutes.
  3. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add broccoli, onion, carrots, water chestnuts, and bell pepper. Stir and cook the vegetables until they are just tender, which should take about 5 minutes. Transfer the vegetables to a dish and set aside.
  4. In the same skillet or wok, heat the remaining 1 tablespoon of sesame oil over medium-high heat. Add the marinated chicken, making sure to reserve the marinade. Cook the chicken until it is just browned, approximately 2 minutes per side.
  5. Stir the reserved marinade back into the skillet with the chicken and add the cooked vegetables. Bring the mixture to a boil and continue to cook, stirring frequently, until the chicken is fully cooked and no longer pink in the center, and the vegetables are tender, about 5 to 7 minutes.
  6. Serve the stir-fried chicken and vegetables over the prepared rice.
